Ahem….Now that I have your attention, let’s talk about Lentils!
Did you know…..
1 cup of lentils = Approximately 18 grams of protein and 14 grams of fiber?
They are extremely helpful for balancing blood sugar, aid in reducing cholesterol, and are one of the most sustainable pulses on the planet. These little nuggets sure pack a punch! Not only are they high in protein and fiber, they are also rich sources of folate, copper, iron, and molybdenum.
You can find lentils at most grocery stores either prepackaged or in the bulk bins. When selecting lentils, make sure there is no sign of moisture and the lentils are whole, not cracked. Lentils can be stored for up to twelve months in an airtight container.
Eat ’em in soups, salads, dips, curries or yes….even in, yes…cupcakes!
Check out THIS recipe below for a new take on cupcakes… lentil style. I suggest substituting the sugar with maple syrup and honey and using a touch less of the liquid ingredients like oil. I’m not a fan of canola oil, so I’d suggest Grapeseed or olive.
